It’s cold and damp outside, but not cold enough for the furnace to kick on. What’s an always-cold girl to do? Bake cupcakes! These are super easy and include one of my favorite fall flavors — pumpkin! They go great with pumpkin spice lattes, too.
Pumpkin Spice Cupcake Recipe
1 box spice cake mix
1 15-ounce can of pumpkin puree
1. Preheat the oven to 350 degrees.
2. Pour the two ingredients into a large mixing bowl and stir just until moistened.
3. Using an electric mixer, blend the cupcake batter on medium speed for about 2 minutes or until smooth and thoroughly mixed.
4. Divide the batter evenly into paper lined cupcake cups and bake for 15-20 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool in the pans on a wire rack for 10 minutes, then remove cupcakes to wire racks to cool completely. Frost with cream cheese frosting, or pretend they’re muffins and keep them unfrosted.
