Easy homemade flour tortillas for a quick weeknight dinner.

Full-time job, two kids, half marathon training…. I’m as busy as the next lady. So I often don’t know what’s for dinner on any given night –  but need to figure out something quick. When this happens, I often make tortillas and let the kids decide what to put in theirs (usually PB&J, sometimes with banana or apple slices as well). They whip up pretty quickly (a little over a half hour) and have just five ingredients — all of which I keep on hand.

This homemade tortilla recipe uses wheat flour, but white AP flour could be used as well.

Easy Flour Tortilla Recipe

Ingredients:
2 cups of whole-wheat flour (I use King Arthur Whole Wheat White Flour; AP flour can also be used)
1 1/2 teaspoons of baking powder
1 teaspoon of salt
2 teaspoons of vegetable oil
3/4 cup warm milk

In a medium bowl, stir the flour, baking powder, salt and oil together. Pour in the warm milk and stir until a sticky ball forms. Turn out onto a floured counter and knead for a minute or so, until the dough firm up and becomes less sticky. Place the dough back into the bowl and cover with plastic wrap, and let rest for 20 minutes.

After the dough has rested, divide into eight sections. Roll each section into a ball and place on a plate. Cover dough balls with plastic and let rest for 10 minutes.

After dough balls have rested, remove each one individually and pat into a circle, then roll out with a rolling pin until it’s to the desired size (I shoot for about 8 inches in diameter). Stack the circles with plenty of flour between them to prevent sticking.

In a dry skillet heated to medium heat, cook the tortilla (flip over when bubbles form). Keep the cooked tortillas covered with a cloth until ready to use.
